Pancake Cereal

I know I’m maybe a year late with this, but come on, how cute does these pancakes look? They are definitely a bit fiddly to make, but very fun to eat actually! This version is quite full of protein, but if you do not have any protein powder, you can just swap it with more flour and some syrup or sugar instead!

Ingredients

Pancake Batter

50 grams all purpose flour
15 grams vegan vanilla protein (sub more flour + some sweetener)
0.25 teaspoon baking powder
0.25 teaspoon cinnamon
Pinch of salt
150 milliliters plant based milk (add more if too thick)

Maple Tahini Drizzle

1 tablespoon tahini
2 teaspoons maple syrup
Pinch of salt
Water to thin

Instructions

Pancakes

  1. Combine everything until a thick, yet a little runny batter forms and leave it to sit for a few minutes.
  2. Grease and heat your pan to medium heat and add 1/2 tsp of batter around the pan.
  3. Cook the mini pancakes on one side before careful flipping and repeating with the rest of the batter.

Maple Tahini Drizzle

  1. Whisk everything together until smooth and pourable.
  2. Add your pancakes to a bowl and pour over some fruit, your tahini drizzle and some plant based milk for the full cereal experience.
